JAPANESE STYLE KNIVES: Over the past two years, these knives have become my most popular models. The simplicity of these knives reveals an understated elegance that is, characteristically, Japanese. The construction of these knives combines some traditional techniques with superior, modern materials and methods. The resulting "East-meets-hi-tech" combination takes these knives to a higher level of performance and durability.
